WATERMELON- THE IDEAL SUMMER FRUIT

Watermelon is an invaluable source of nutrition worldwide. In some cultures watermelon is essentially a staple. The ancient Egyptians were the first people known to cultivate watermelons, although this melon almost assuredly originated in tropical Africa, where to this day they may be found growing wild. From Egypt melons were disseminated to the Middle East, where they have been a staple food for untold centuries. In fact, they are a reliably nourishing element of the desert diet, and dozens of varieties of melons are found growing in Egypt, Ethiopia, Palestine, Syria, Persia, Turkey, Jordan and the Arabian Peninsula.

Second only to tomato, watermelon is a top source of lycopene, a substance which has been determined to prevent cancer. Lycopene is the pigment responsible for watermelon's reddish color. The color is especially vivid in sun ripened organic watermelons, and this is a sign of exceptionally rich lycopene content.

Watermelon is an excellent source of vitamin C, beta carotene, folic acid, and biotin. For minerals it is highest in potassium and magnesium. Watermelon is approximately 93% water. It is rich in the electrolyte potassium, which aids in transport of water from the intestines into the blood. Sodium, another electrolyte, is also needed for water transport but is available only in a minute amount. By salting watermelon it not only seems to taste sweeter, but it also provides a better balance of electrolytes. Watermelon is a superior cure for dehydration, even more so than plain water. It is most effective for rehydration when salted. As a thirst quencher it is infinitely better than juice or sports drinks.

Watermelon Tips and Remedies

1. Buying a watermelon is a futile endeavor unless you know how to select a ripe one. There is nothing worse than buying an unripe melon. Here are some simple rules that will allow you to enjoy the best tasting watermelon in the bunch:

a) The key technique is to sound the melon. Hit it with the middle knuckle, much like a doctor thumping an abdomen. If the melon resounds with a dull noise, like a thud, it is ripe. If it is resonate or sharp, it is too green. The thud sounds like hitting the leather heel of an old shoe.

b) Ripe melons reveal themselves partly by their bottoms. If the underside is yellow or creamy colored, it is probably ripe. If it is green or greenish-white it is probably unripe.

c) Look also at the end where the vine met the melon. If the vine remnant is shriveled, brown and crusty, it is probably ripe. If it is green and thick, it may well be unripe.

d) Carefully inspect the melon before buying to ensure there are no bruises. Bruising rapidly leads to spoiling of the fruit. Don't accept a bad melon unconditionally. If you find it is sour or rotten, take it back and select a different one or get a refund. Grocers should supply top grade food and they are liable for inferior produce. Always wash the outside before cutting.

2. Eat the watermelon seeds, shell and all. It is guaranteed that a watermelon won't grow in your abdomen. Watermelon seeds are rich in a variety of nutrients, particularly amino acids and fatty acids, plus vitamin E, potassium and phosphorus. They provide immense fuel value for the creation of cellular energy, as they are rich in digestible fatty acids. Furthermore, watermelon seeds contain a substance which helps eradicate intestinal parasites. To optimize absorption of the curative substances, it is essential they are thoroughly chewed, because the coarse outer seed cannot be digested and the nutrients will be wasted.

3. Watermelon is a natural diuretic. Obviously, anyone who has eaten large amounts of it knows how well it works. It is the ideal food for combating water retention, regardless of the cause. If you tend to retain water, the consumption of watermelon will usually help.

4. Watermelon is an ideal food for the sick and infirm. It is readily digested and provides simple sugars, which are valuable for providing fuel. It is an excellent source of potassium, which is available in a form that is readily absorbed. It is an ideal food even for poor appetite resulting from sickness, drug therapy, cold, flu or cancer.

5. If you are sensitive to heat and/or have a history of heat exhaustion or heat stroke, it is life saving to eat watermelon. It is the top anti-heat food and acts to dramatically increase heat tolerance. Southerners seem to know instinctively that by eating watermelon they are better able to handle the sweltering summer heat and humidity. Watermelon provides much needed potassium and vitamin C, which is readily lost in the sweat as a result of heat exposure. Since sodium and chloride are lost in vast amounts during sweating, the watermelon should be salted freely; preferably use sea salt. If you cannot handle hot humid weather, eat watermelon every day and be sure to salt it. Your tolerance for defeating the heat will improve dramatically.

6. If there is a history of heart disease or heart rhythm disturbances, such as atrial fibrillation, tachycardia, or palpitations, watermelon may be an important dietary addition. It is rich in naturally occurring potassium, containing considerably more of this critical mineral than traditional sources such as bananas and orange juice. Plus the type of potassium it contains absorbs quickly into the bloodstream. Furthermore, watermelon's natural diuretics help decrease the pressure on the heart by stimulating the kidneys to remove excess water from the tissues.

7. Watermelon is an excellent digestive aid. If you suffer from indigestion, eat a wedge of watermelon with meals. The high content of water and potassium stimulates digestive juices and eases elimination. Thus, watermelon may be helpful for alleviating constipation.

8. If you are trying to lose weight, watermelon is a perfect food. It is very filling, full of fiber, and rich in nutrients. Best of all, despite its sweet taste there are only seven calories per ounce.
